National Apple Dumpling Day

Today is National Apple Dumpling Day! I think this is a great dessert for Fall, so here’s a recipe if you’re interested in making them. FYI, it’s a little time consuming.

Ingredients

1 recipe pastry for double-crust pie
6 large Granny Smith (or whatever kind you like) apples, peeled and cored
1/2 cup butter
3/4 cup brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3 cups water
2 cups white sugar
1 teaspoon vanilla extract

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Butter a 9×13 inch pan.
  2. On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
  3. With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
  4. In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
  5. Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

Work Drama Explained

That annoying moment¬†when you lose two jobs in three days. Just my luck right? A few Mondays ago my boss at my secretary job that I’ve had for about a year now told me he couldn’t afford to pay me anymore. This past Tuesday was my last day. To be honest, I didn’t enjoy it much, but the steady money was nice.

 

 
Fast forward to Wednesday. I walk up to the hair salon to see the entire place empty plus two police officers were there. My other boss told me he would call me and never did so I called him the following Sunday and he said he would call me on Wednesday because he was “making adjustments”. Obviously that never happened and I havent heard from him since.

A few days later I was talking to one of my close friends about the stipulation which led me to check the salon’s Instagram account to see if there was any news there. I went to the website (which was down a few days before) and found out they had changed locations without notifying me.

Maybe a week later I was at the library and remembered there’s a hair salon across the street and considered applying there. After I got my books I went to the dollar store next to the salon and while I was walking I thought I saw someone familiar through the window. An obese person in a red shirt who kind of looked like my boss, but I ignored it and checked out the dollar store.

When I got home I decided to compare the address of the salon’s new location with the hair salon I was thinking about contacting and guess what? It was the exact same place which means it was my former boss that I saw! It goes without saying that I won’t be contacting that place. To this day my so called boss still hasn’t called me so I’m deleting his number from my phone and looking for a new place to work.

I’m Sorry…

I got distracted with work drama, my business, etc. and COMPLETELY forgot about my blog! Even having WordPress up as a browser tab everyday didn’t remind me because my brain is trained to ignore it. I’m SO sorry guys. This will never happen again. In other news my birthday was August 22. I played mini-golf the Sunday before with some of my¬†friends and we had a fun time. Sunday also happened to be my friend’s birthday so we go to do a joint birthday celebration for the first time which was cool. Unfortunately, I don’t have any pictures so enjoy this stock photo.
